Guest guest Posted August 4, 2004 Report Share Posted August 4, 2004 Quinoa-Rice Bread Mix thoroughly: 1 & 1/4 cups rice flour 3/4 cup quinoa flour 1/2 cup potato starch flour 1/2 cup tapioca flour 2 & 1/2 tsp xanthan gum 2/3 cup soymilk powder 1 & 1/2 tsp salt 2 Tbs + 1 tsp sugar and 2 & 1/4 tsp instant yeast granules In a separate bowl, combine: 4 Tbs melted margarine 1 cup warm water 1 tsp apple cider vinegar Slowly add vinegar mixture to dry mixture. Add 3 eggs` worth of Ener-G (prepared), a little at a time (the mix should feel a little warm). Beat with mixer on high speed for 2 minutes. Cover with plastic wrap and a towel, and let rise until doubled. After the first rise, beat the dough again for 3 minutes on high. Fill a large loaf pan 2/3 full (can use extra dough in muffin tins). Let rise until slightly over the top of the pan. Bake at 350 F for 10 minutes. Cover with foil after 10 minutes. Bake an additional 20 - 35 minutes.
