Here's a vegan tempeh recipe from a Vegetarian Times cookbook we really like:

Jamaican Jerk Tempeh

Amount Measure Ingredient -- Preparation Method

4 scallions -- chopped

1 sm yellow onion -- chopped

1 tsp habanero chile -- finely chopped (be careful!)

1/4 c low sodium soy sauce

1/4 c red wine vinegar

1 1/2 tbsps vegetable oil

2 tbsps brown sugar

1 tsp ground thyme -- (or 1 tbsp fresh thyme)

1/2 tsp nutmeg

1/2 tsp ground allspice

1/4 tsp ground cloves

1 lb tempeh -- cut in 1/2 " cubes

leaf lettuce

 

Preheat oven to 375° F.

 

Combine all ingredients except tempeh and lettuce in a blender or food

processor. Process 10 to 15 seconds at high speed.

 

Place tempeh in a 9x13 inch casserole or baking pan and cover with sauce. Bake

until tempeh is browned, 10 to 15 minutes.

 

To serve, remove tempeh from sauce and place on a serving plate lined with leaf

lettuce. Serve remaining sauce as a dip.
