Guest guest Posted April 12, 2005 Report Share Posted April 12, 2005 * Exported from MasterCook * Chickpea and Orange Salad with Fresh Mint - Vegan Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 mandarin oranges 1 can chickpeas (garbanzo beans) -- (14oz) drained and rinsed 1/2 small red onion -- sliced into thin half-moons 1 Tbsp slivered fresh mint -- (1 to 2) 1 Tbsp extra-virgin olive oil (optional) -- (1 to 3) 1. Separate one and a half of the mandarin oranges into segments, removing as much white pith as possible. Cut each segment in half, and remove any pips. 2. Squeeze the juice out of the remaining half mandarin, and discard the pulp. 3. Mix the mandarin segments and juice with all other ingredients in a bowl. Leave for half an hour to allow the flavours to mingle. Serve cold or at room temperature.
