STEDDA RICOTTA

 

This is excellent in lasagna or any other recipe requiring ricotta.

 

1 lb. firm tofu

1/3 c. olive oil

1/2 tsp. ground nutmeg

1/2 tsp. seasoned salt or ground rock salt

1/4 tsp. salt free seasoning

 

Place three-fourths of the tofu and the remaining ingredients in a blender.

Blend until thick and smooth. Mash the remaining tofu into the blended

mixture.

Yield: 2 1/2 to 3 cups.
