Recipe: Chai Latte Cupcakes

 

Would you believe that a mere teaspoon of cinnamon contains 28 mg of

calcium, almost 1 mg of iron, over a gram of fiber, and plenty of vitamins

C, K, and manganese? It's true! Some researchers even revealed that

cinnamon's scent boosts brain function! Stimulate your brain and mouth with

these irresistible Chai Latte Cupcakes. Created by a vegan baked goods

specialist, you can't go wrong with this recipe (check out the book section

below!).

 

Ingredients:

 

1 cup soymilk or other grain milk

4 black tea bags or 2 Tbs. loose black tea

1/4 cup canola oil

1/2 cup plain or vanilla soy yogurt

3/4 cup granulated sugar

1 tsp. vanilla extract

1-1/3 cups all-purpose flour

1/4 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

2 tsp. ground cinnamon

1 tsp. ground cardamom

1/2 tsp. ground ginger

1/4 tsp. ground cloves

pinch of ground white or black pepper

 

For Sugar Topping :

1/2 cup confectioners sugar

2 Tbs. cocoa powder

1 tsp. ground cinnamon

1/4 teaspoon ground nutmeg

 

Directions:

 

Preheat oven to 375F and line tin with cupcake liners.

In a small saucepan heat soymilk until almost boiling; add tea bags, cover

and remove from heat; let sit for 10 minutes and then stir tea bags and

thoroughly squeeze to ensure as much tea is dissolved in milk as possible.

In a large bowl, whisk together oil, soy yogurt, sugar, vanilla and tea

mixture until all yogurt lumps disappear.

Sift flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger,

cloves, and pepper into wet ingredients.

Mix it all until large lumps disappear (some small lumps are okay).

Fill tins full and bake about 20-22 minutes, and until a toothpick inserted

comes out clean.

After cupcakes are completely cooled, add topping: sift confectioners sugar

over cupcakes first, then mix cocoa, cinnamon, and nutmeg together and sift

onto each cupcake.

Health: Cinnamon Stabilizes Blood Sugar

 

Adding as little as six grams (about a teaspoon) of cinnamon to desserts can

lower blood sugar, according to a recent study. Previous research has

revealed that daily doses of cinnamon, over the course of 40 days, can

reduce blood glucose and cholesterol in patients with type II diabetes.

 

The new study, published in the June issue of the American Journal of

Clinical Nutrition, measured the effects of cinnamon on post-meal blood

sugar in healthy volunteers at a hospital in Sweden. Participants were

tested with and without cinnamon added to their meals. The post-meal surge

in blood sugar was lower after the volunteers consumed a dessert with

cinnamon than without.

 

The authors of the study registered that cinnamon lowers blood sugar by

stimulating insulin receptors on body cells. Insulin is responsible for

stimulating cells in the body to take up glucose from the blood. By making

cells more sensitive to insulin, cinnamon increases the amount of glucose

removed from the blood.
