Guest guest Posted October 27, 2004 Report Share Posted October 27, 2004 * Exported from MasterCook * Great Pumpkin Cookies Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups whole barley flour 1 cup quick cooking oats 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 1 cup butter or margarine softened 1 cup packed brown sugar 1 egg -- slightly beaten 1 teaspoon vanilla 1 cup pumpkin -- canned or fresh 1 cup chocolate or orange flavored chips 1 cup raisins Combine flour, oats, cinnamon, and salt. In a separate bowl, cream butter. Add sugar gradually, beating until light and fluffy. Add egg and vanilla, mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in chocolate chips and raisins. Drop heaping teaspoons on lightly greased cookie sheet. Bake for 12 minutes at 375 degrees (190C). Remove from sheets, cool on rack. Makes about 4 dozen. Description: " Pumpkin is very nutritious! Assoc. : 0 0 0 0 0 0 0 0 0 0 0 0 * Exported from MasterCook * Low-Fat Pumpkin Oatmeal Cookies Recipe By : Serving Size : 60 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup pumpkin puree 2 egg whites -- whipped 1 cup packed brown sugar 1 1/2 cup unbleached flour 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon cloves 3 cup rolled oats 1 cup raisins 1. Preheat oven at 350 degrees F. Prepare baking sheet with cooking spray. 2. In a mixing bowl, combine pumpkin and egg whites. In another mixing bowl, combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. 3. Mix wet ingredients with dry ingredients just until moistened. 4. Drop by tablespoonfuls onto prepared baking sheet, 2 " apart. 5. Bake for 15 minutes, or until they seem firm.
