Carob Walnut Balls

 

 

1/2 cup sunflower seeds

1/2 cup walnuts

1/2 cup peanut butter

1/2 cup sultanas

10 dates, pitted

1 tsp GF vanilla extract (essence)

1 tsp carob powder

1/2 tsp cinnamon

1/2 cup walnuts

1/4 cup desiccated (shredded) coconut

 

 

1. Grind the first 1/2 cup of walnuts and the sunflower seeds in a

food processor.

 

2. Add peanut butter, sultanas, dates, vanilla extract, carob powder

and cinnamon. Process until well blended and beginning to form a dough

consistency.

 

3. Add 1/2 cup walnuts and process until lightly chopped and mixed

through.

 

4. Take small portions of mixture and, using hands, work into a dough.

Form into balls and toss in coconut.
