If you think you could veganize based on that, let me know, and I'll send it! It's reallllllllllly good! I have made a few but the all have come out sloppy and I have to plop it on to the plates with a spoon. I tried using less liquid, adding more crumbs, adding some egg replacer powder, cooking longer but nothing seems to work. This is starting to get frustrating. They taste so good, but I'ld really like to be able to serve them in slices. Any tips ? Kim. Once I get it right, I want to make a batch and freeze some for an easy meal. Guest guest Posted June 17, 2005 Report Share Posted June 17, 2005 Ener-G egg replacer, or some other " binder " can replace the egg, and soy milk or an evaporated milk sub recipe can replace the can of evaporated milk. I have an evaporated milk sub recipe using DariFree powdered potato milk in one of my Lisa Lewis cookbooks, I think (Special Diets for Special Kids, I believe). But the DariFree is kind of sweet, not " neutral " like most recipes call for. You could probably substitute Better Than Milk powder for the DariFree, or just use a nice thick soy milk instead.
