We can't get things like Emes Kosher-Jel in Australia. (I must admit, I don't even know what kosher jel is). Can anyone suggest a suitable substitute? Also, I have had a look at the archived cheesecake recipes. Mine always turn out a little bit runny.... Any suggestions on how to firm them up?
