I hear you about all the time it can take to prepare meals - any meals - but it's not so time-consuming if you plan ahead a bit. If you have a freezer a lot of things can be made in larger quantities (chili, casseroles, thick soups, etc.) and defrosted when you need them. If not, making double quantities of some things is still a good idea - most of those kinds of things will keep in the fridge for several days and it's no hardship to have something you enjoy twice in one week. Perhaps one thing to do is to think of breaking away from the usual me*t-and-2-veg meal pattern (if you haven't done that already) and think of having, say, steamed vegetables of your own choosing on rice with a dash of soy sauce. (I say of your own choosing, because the packages of 'stir-fry' veg in the freezer compartments of supermarket are boringly similar.) A very thick chunky soup and a lovely hunk of wholewheat bread is a meal in itself if you also have a salad to balance your nutritional needs. None of these take long. (Oh about the salad - be careful of the calories in the bottled dressings or even homemade ones; they usually are way higher than the rest of the meal!) I am sure there are lots of quick and easy recipes in the Files (access from our Homepage). Meanwhile, I'm hoping members will have some good suggestions for you. All the best of luck. Then I just reach in and grab whatever I like at that moment. I usually make a large salada at supper time and then there is leftover for lunch the next day. I make things like veggie Lasagna on the weekends and freeze in individual size containers for work or fast suppers. Soups get frozen into individual containers also for the same reason. I usuall pick one or two days of the week to make things to freeze (one evening, and one weekend day) that way there is always something in the freezer if you don't feel like cooking or just don't have time. Also it is a lot cheaper than picking up frozen entrees in the grocery store.
