TV 1 head Romaine lettuce 3 tomatoes, chopped in small pieces 2 corn tortillas, baked at low temperature until crisp, then broken in small pieces 1/8 cup pepitos (pumpkin seeds) Dressing: 1 package lite silken tofu 1 Tbsp. olive oil 2 Tbsp. lemon juice 2 small cloves garlic 4 - 5 sprigs fresh cilantro 1/8 cup pepitos (pumpkin seeds) salt to taste Break the lettuce into bite sized pieces. Place in salad bowl. Blend tofu, olive oil, lemon juice, garlic, fresh cilantro, pepitos and salt in blender until smooth. Pour over lettuce. Mix. Add chopped tomatoes, tortilla pieces and pepitos.
