Ingredients - - Cooking spray 1 - medium onion, cut into small dice 1 teaspoon finely chopped garlic 1 teaspoon finely chopped fresh ginger 1 pound (480 g) okra, sliced into 1/4 inch-thick (0.6-cm-thick) rounds 1 28-ounce (840-g) can low-sodium diced tomatoes with juices 1 teaspoon finely chopped jalapeño or serrano pepper Preparation - Estimated cooking time: 30-60 minutes - 1 Spray a large sauté pan once with cooking spray and set over low heat. Add onions and cook, stirring, for 2 minutes, or until translucent. 2 Add garlic and ginger and cook, stirring, for 15 seconds. 3 Add okra, tomatoes and peppers.
