Guest guest Posted January 14, 2005 Report Share Posted January 14, 2005 Mediterranean Bean Salad Source: The Guilt-free Gourmet Tried and True - Delicious! 4 cups brown rice, cooked 1 can kidney beans 1 cucumber, sliced 1 - 2 tomatoes, diced 1 can artichoke hearts (water-packed), drained and sliced 1/3 cup lemon juice 2 Tbsp. olive oil (or less) salt to taste herbs to taste (basil, oregano, garlic, etc.) Mix all ingredients well and chill before serving.
