Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Coconut Pie Source: Vibrant Life; July/August 1999 1 baked 9-inch gluten free pie crust (a nut crust would work well) 1 1/2 lbs. tofu 1 1/2 cups powdered sugar (or alternative sweetener) 1/4 cup oil 1 tsp. vanilla 1/2 tsp. salt 1 1/2 cups dried, sweetened coconut 1/4 cup dried, sweetened coconut Heat oven to 350 degrees. Blend tofu, sugar, oil, vanilla, and salt until smooth. Fold in 1 1/2 cups coconut. Pour into prebaked pieshell. Bake 15 minutes. Sprinkler with remaining coconut. Bake an additional 5 minutes or until filling looks firm and set. Serve chilled. LaDonna ~ Desiccated coconut is the washed, steamed, shredded and dried meat used in sweets, baking, savoury dishes and as snack food.
