Guest guest Posted August 31, 2006 Report Share Posted August 31, 2006 Here's a recipe I got from a friend for gluten-free dumplings to cook on top of your favourite stew. GLUTEN-FREE DUMPLINGS 1/2 c. white rice flour 1/4 c. soy flour 1/4 c. potato starch 1/4 tsp xanthan gum 1/2 tsp sea salt 1/2 Tbsp gf baking powder 1/2 c. milk or veg. broth 2 Tbsp oil Mix all the ingredients together about 15 min. before your stew is ready. Make sure your stew is at a gentle boil. Drop the dumplings by spoonfuls into the stew. Cover and steam aprox. 12-15 min. Serve hot. Try using different flours too. I have never tried it in this recipe yet, but I will now to see how it turns out. I will also try plain garbanzo (chickpea) without the fava beans. Today, I added 1/2 tsp of parsley flakes. It was delicous! No one could tell the difference. My daughter made it once without the xanthan gum (only because she couldn't find it), it works too! We like to make it with parsley flakes. I'm really glad you asked about it, because I have a friend that can't have soy, and now I can share this recipe with her.
