Guest guest Posted April 18, 2005 Report Share Posted April 18, 2005 Microwave Tapioca Source: White Wave product cookbook 1/2 cup small or medium pearl tapioca 1 cup soy milk 3 cups soy milk 1 1/2 cups sweetener of choice, or to taste 2 teaspoons vanilla Soak the tapioca in 1 cup soy milk overnight. Pour 3 cups soy milk into a 2-quart bowl or measuring cup. Add the soaked tapioca and sweetener with a whip. Microwave on high for 6 minutes, and stir thoroughly with a whisk. Microwave on high again for 2 minutes, whip, and microwave 2 more minutes. Don't let it boil over. Whip in the vanilla and pour into individual serving dishes or a serving bowl.
