Hi all,

 

My latest quest is searching for recipes that can mostly be prepped in a food

processor. I found this in a book from library. I've always loved Nathalie

Dupree's shows on tv. Here is a recipe of hers that can be made using a food

processor OR electric mixer. PS: Can be used for hors d'oeuvres; can freeze,

too.

Broccoli or Spinach Tart

Amount Measure Ingredient -- Preparation Method

4 ounces blue cheese

8 ounces cream cheese -- at room temperature

3 tablespoons butter -- at room temperature

2 tablespoons heavy cream

2 large eggs

salt

cayenne pepper

2 teaspoons snipped fresh chives

1/2 cup broccoli florets -- lightly steamed and well drained

or 5 ounces frozen chopped spinach, thawed and drained

1 9-inch prebaked pastry shell -- in a round tart pan with a

removable bottom

 

Preheat the oven to 375°F.

 

In the bowl of a food processor or electric mixer, blend the blue cheese, cream

cheese, butter, and cream. Add the eggs, salt, and cayenne to taste and process

or mix. Sprinkle the chives over the mixture and pulse the machine twice or stir

in well. Scrape the custard into the prebaked pastry shell and sprinkle the

broccoli or spinach evenly over the pie.

 

Bake until the tart is puffed and the pastry golden brown, about 25 minutes.

Cover the edge of the pie with foil if it gets too dark. Let cool on a wire

rack.

 

For hors d'oeuvres, remove from the pan and cut a circle 3 inches in diameter in

the center using a biscuit cutter. Cut the outer " doughnut " and the inner circle

into bite-sized pieces.

 

The tart can be kept, refrigerated, for several days, or frozen for up to 3

months, tightly wrapped and in a sturdy container.

NOTES : With the cream cheese and blue cheese as deliciously rich thickeners

this cheese tart is particularly suited for an hors d'oeuvre or appetizer. If

you are in the mood to experiment, use other green vegetables--such as broccoli

rabe or cooked turnip greens. A tart pan with a removable bottom is a good

addition to the kitchen because it makes for a much prettier presentation than a

pie pan or plate. If you are using a pan without a removable bottom, slice and

serve the tart in thin wedges. I frequently double the recipe, make two tarts,

and freeze one for later.
