Guest guest Posted April 18, 2005 Report Share Posted April 18, 2005 Love Your Heart Butter Source: Benton Sisters' Cookbook Vol. 1 1 cup corn meal mush (1 cup boiling water and 1/3 cup corn meal equals 1 cup. mush, cooked) 1/4 cup water 1/2 cup cashews 3/4 tsp. salt or butter salt 1/3 cup coconut milk 1 tsp. butter flavoring (water based) Whiz cashews and water in blender until smooth. (Add coconut milk to keep blender going, if you need to, until cashews are smooth.) Thoroughly blend all ingredients together in blender until smooth. Yield: 1 pint. *NOTE: If you have just opened a new can of coconut milk, you won't want to let it set in the refrigerator until the next time you make butter. Just measure the remaining coconut milk out into 1/3 cup quantities and freeze in little baggies tied tight with a twisty. When ready to use, pop it into the microwave to thaw just a bit.
