Guest guest Posted November 2, 2005 Report Share Posted November 2, 2005 BLACK BEAN TAMALES Dough: 3 cups Masa Harina (special cornmeal) 1/2 cup margarine or other shortening (solid preferably) Vegetable broth as needed 1/8 tsp salt In a large bowl, put masa. Mix in margarine with fingers, until mixture is well-blended. Mix in vegetable broth until you get a medium-soft dough (not sticky, not dry, but handleable). Cover with plastic wrap, so it doesn't dry out. Filling: 1 cup black beans 1/3 cup chili seasoning mix of choice Mix all. Sauce: 3 cups tomato sauce 1 Tbs chili powder (or to taste) Mix well. Assembly: Take squares of aluminum foil; spray lightly with no-stick. Take a portion of dough and pat out into a 1/4 " -thick square, leaving a large border of foil. Put a line of filling down the center of the dough. Roll up foil, forming the dough and filling into a cylindrical shape with the filling enclosed in the dough, and tightly seal the foil. Do this with all the dough and mixture. Put packages into steamer. Steam 45 minutes. Open foil, place tamales on plates. Serve with heated sauce poured over them.
