Guest guest Posted May 27, 2005 Report Share Posted May 27, 2005 MOCK CHOPPED LIVER (Cashew, Onion, and String Bean Pate) Makes about 2 cups Ingredients: 1 1/2 tablespoons safflower oil 1 1/2 cups chopped onions 1 cup toasted cashews 1 cup steamed fresh string beans, cut into 1-inch lengths, or 1 cup thawed frozen string beans 1 tablespoon lemon juice salt and freshly ground pepper to taste Directions: Heat the oil in a pan. Saute the onions slowly over moderately low heat, stirring frequently, until nicely browned. Combine the onions with the remaining ingredients in the container of a food processor. Process until smoothly mashed, scraping down the sides as needed. Store in a bowl until needed, and bring to room temperature before serving with vegetables or to be spread over crackers or sliced bread.
