Guest guest Posted May 27, 2005 Report Share Posted May 27, 2005 Italian Potato Salad 2 medium potatoes, cooked and cut into bite size chunks 1/2 cup diced celery 1/2 cup diced cucumber 1/2 cup black olives, pitted and diced 2 tablespoons minced onion 1/4 teaspoon oregano 6 tablespoons olive oil 3 tablespoons apple cider vinegar 1 clove garlic, crushed 1/4 teaspoon salt 1/8 teaspoon pepper 1. Toss potatoes, celery, cucumber, olives, onion, and oregano together lightly with a fork. 2. Carefully blend in olive oil, vinegar, garlic, salt, and pepper. 3. Cover salad and chill for 1 hour.
