It's hardly a sound business plan, what with the lack of revenue, but Rock and Rolls was celebrating its first birthday, so we'll let it slide. The bakery on Vineyard Avenue was started by David Meltzer and Joan Filiberti, who has a rest-of-the-day job as a medical technologist. Rock and Rolls is known, at least in part, for its wheat-and-gluten-free Wednesdays. That's when pastry chef Theresa Helfrey whips up all manner of puddings and breads (tapioca flour, anyone?) for the dietetically challenged.
