Guest guest Posted January 7, 2005 Report Share Posted January 7, 2005 Jacquie, I did get an onion soup recipe. I've altered it just a bit to fit the scope of my demo class. Here it is: Makes approx. 2 quarts soup 8 cups onions cut in thin half circles 6 cups water or vegetable stock 2 Tbl spoons minced garlic ¼ cup Braggs Liquid Aminos 1 cup uncooked quinoa Cooking the quinoa. Using a 1 quart sauce pan (or a small sauce pan) boil 1 cup water and then add ½ cup quinoa grain. Boil until the water boils down to the top of the grain. Turn fire down to warm or simmer and cover pan for 15-20 min. Check after 15 min. to be sure it doesn't over cook (ie burn bottom or stick to bottom of pan). Cooking the onions. In a large non stick skillet saute half the onions until they are a deep brown but not burned. The trick is to cook them until they are well browned and tender yet still have a little firmness. Add a little water to keep onions from sticking. Repeat with remaining onions. Finishing the soup. In a 3-4 qt pot place all the sauteed onions the garlic & water. Bring to a boil reduce heat and simmer covered about 20 min or until soup broth is quite flavorful. Turn burner to lowest heat. Add the cooked quinoa and stir slowly. Add the Braggs Aminos slowly with a teaspoon until you have the flavor you like. You may not need the full amount.
