Chargrilled and pickled vegetables

Hi all

 

I would like to make my own " chargrilled " veges such as zucchini,

eggplant and capsicum and store them in oil.

 

Also, I would like to store some veges in a vinegar/oil solution -

such as sundried tomatoes.

 

Can anyone assist with how to prepare these veges, recipes for the

oil and the vinegar/oil solutions and hints on storage (best type of

container, how long to store, etc)
