Cream Cheese Frosting

***this recipe has been adapted to make it vegan***

 

8 oz. soft soy cream cheese (Tofutti)

2 tbls. soy milk

1 1/2 tbls. lemon juice

finely grated rind of 1/2 lemon

1/4 tsp. stevia (pure white powdered)

1 tbls. maple syrup

 

Soften the soy cream cheese with the soy milk. Beat in the lemon

juice, lemon rind, stevia and maple syrup. Whip until thoroughly

blended and creamy.

 

Yield: about 1 cup
