Easy Pasta Sauce

This is very simple! It goes well with rice too (especially fragrant

rice.) Yield: 2 1/4 cups sauce.

 

1 small onion, diced

2 red bell peppers, diced (or 7 1/4 oz. jar roasted red peppers)

2 garlic cloves, minced

2 tablespoons fresh cilantro (Chinese parsley,), chopped

6 tablespoons tomato sauce

6 pimiento-stuffed olives, halved

 

1/4 lb. dried gluten free pasta of choice, cooked according to package

directions.

 

In a large non-stick skillet, heat several tablespoons water. Add the

onion, peppers, and garlic. Cook over medium high heat until

vegetables begin to soften (several minutes). Add remaining

ingredients except pasta and cook another 5 - 8 minutes.
