Snowy Bean Mashed Potatoes

Recipes

 

2 medium potatoes, peeled and quartered

2 teaspoons olive oil

2 cups cooked white beans OR 1 - 19 oz. can white beans, rinsed and

drained

1/4 cup water

3 cloves garlic, minced

3/4 teaspoon salt

 

 

Boil potatoes for 15 minutes or until soft. Drain.

 

In a bowl, mash potatoes with oil.

 

In a food processor, puree beans, water, garlic, and salt to form a

thick paste. Transfer mixture to mashed potatoes in bowl; mix until

well combined. Serve hot or at room temperature.
