I've flirted with the idea for some time, and for about three years I was a flexitarian (no red meat). Since August I've been completely meat-free (hurray!!), but have been worrying about getting all of the nutrients that I need. I haven't done a whole LOT of research into this (I haven't had much time), but how can one avoid being malnourished and maintain a balanced diet? In particular, what are some good sources of iron and B-12? I'm looking for articles, books, etc, that can get me started into this. Thanks. Greens have lots of iron (spinach etc.) There was an excellent article about iron in a recent issue of Cooking Light magazine. B-12 can i think be a problem... you may want to take supplements of B-12 but i'm not sure... I think vegans have to take supplements. I think eggs might have B12 but i'm not sure.
