Vol. 1 1 c. corn meal mush (1 c. boiling water and 1/3 c. corn meal equals 1 c. mush, cooked) 1/4 c. water 1/2 c. cashews 3/4 tsp. salt 1/3 c. coconut milk* 1 tsp. butter flavoring (gf/water based) Whiz cashews and water in blender until smooth. Add coconut milk to keep blender going, if you need to, until cashews are smooth. Thoroughly blend all ingredients together until smooth. Yield: 1 pint *Note: If you have just opened a new can of coconut milk, you won't want to let it set in the refrigerator until the next time you make butter. Just measure remaining coconut milk into 1/3 c. quantities and freeze in little Baggies tied tight with a twisty. When ready to use, pop into then microwave to thaw just a bit.
