Guest guest Posted October 31, 2005 Report Share Posted October 31, 2005 Wheat-Free Banana Cake Source: Wheatless Cooking (Coffey) 1 1/2 cups brown rice flour 1/2 cup of soy flour 2 1/2 teaspoons baking powder 1/2 teaspoon each of nutmeg and cinnamon 125grams (4 ounces) vegan margarine 1 cup of soy or rice milk 1/4 cup of brown rice syrup, maple syrup, etc.. (quantities may need to change according to taste) Vegan egg replacer for 2 eggs 1 teaspoon of vanilla essence 4 bananas mashed 4 tablespoons of chopped nuts or sesame seeds 1/2 cup of sultanas Preheat oven to 175 degrees celcius (about 350 deg F). Grease 20 cm square cake tin and line the bottom with greaseproof paper. 1. Sift flours, baking powder, nutmeg and cinnamon into large bowl. 2. Gently heat butter milk and honey into a saucepan pour over flour mixture; add egg replacer and vanilla essence, mix with electric beater for 3 mins. 3.
