It is excellent. . .and is in great demand at family gatherings! 1 small head cabbage 1 onion 2 bunches cilantro (fresh) 1 anaheim pepper 2 pasilla peppers 2 lemons 1 - 2 tomatoes 2 cloves garlic 1 lime (optional) salt In a food processor, chop cabbage. DO NOT OVER-PROCESS! Transfer to a large bowl. Continue to process each ingredient individually, and transfer to bowl (onion, cilantro, peppers, tomato, lemons, limes). De-seed peppers if a hot salsa is not desired. Use the pulp of the lemons and lime, but do not use the membranes (causes bitterness). Do not overchop the ingredients, especially the tomatoes. Stir well. Taste test and add more salt and/or lemon if desired. This salsa is great with baked chips or corn tortillas. Great served over brown rice! Great fresh, but keeps well in refrigerator for another day. Hotter peppers may be added for hot salsa. As given it is a mild recipe. Red or yellow peppers can be added for color! Festive!
