McKay's chicken seasoning, or to taste 1 cup tomatoes, chopped Sauté mushrooms, onion, and spinach in a nonstick fry pan with oil. Add crumbled tofu and simmer with seasonings until moisture is gone (should be the consistency of scrambled eggs). When ready to serve, top with chopped tomato. Serve hot. Serves: 8.
