Guest guest Posted April 19, 2005 Report Share Posted April 19, 2005 Spiced Rice Source: McDougall Cookbook 1/4 cup water 1 medium onion, thinly sliced 1 clove garlic, minced 1 cup long-grain brown rice 1/4 tsp. ground cardamom 1/8 tsp. ground ginger dash of cayenne dash of cinnamon dash of cumin dash of nutmeg 1 1/4 cups vegetable broth 1/2 cup raisins In a medium saucepan, cook the onion and garlic in water for 5 minutes, stirring frequently. Stir in the rice and all the seasonings. Cook, stirring for about three minutes, to blend the flavors. Add the vegetable broth. Bring to a boil, reduce the heat. Cover and simmer for 30 minutes. Add the raisins, stir gently, cover, and continue to cook for an additional 15 minutes. Remove from the heat. Let stand, covered, for 15 minutes. Adjust seasonings according to individual tastes.
