I eat potatoes but I probably have the worst diet in the world yet as far as I know, I'm fine. Mind you, I eat lots of unhealthy food that is high in carbohydrates such as crisps. I'm not sure about cutting out *all* starch/carbohydrates - what would your diet consist of if you cut out those products? Why do you think it is the carbohydrates that are making you tired and lethargic? Do you think you eat too many of them? Maybe you should cut down on them (if you have a high proportion of them in your diet) but not give them up completely.
