Guest guest Posted June 19, 2006 Report Share Posted June 19, 2006 Puttanesca Sauce (Vegan) " Sauce of the Harlots " From Wikibooks, the open-content textbooks collection http://en.wikibooks.org/wiki/Cookbook:Puttanesca_Sauce_%28Vegan%29 1/4 - 1/2 cup of extra virgin olive oil 6 garlic cloves, minced one 28 oz (800 g) can of crushed tomatoes 1/2 cup of chopped pitted Kalamata olives 1/2 cup of chopped pitted salt-cured black olives 2 tablespoons (6 tsp) of capers (rinsed) 1 teaspoon of crushed red pepper 1 teaspoon of dried oregano 1/8 teaspoon of pepper 2 tablespoons (6 tsp) of parsley 1. Heat oil in a large skillet. 2. Add garlic and saute over medium heat until garlic starts to brown lightly. 3. Add oregano, pepper, olives, capers, and tomatoes. 4. Simmer for about 15 minutes. 5.
