Guest guest Posted March 21, 2005 Report Share Posted March 21, 2005 Really Good Greens This is a recipe I adapted very slightly from a Hippy Gourmet segment on PBS a few weeks ago. I hated kale until I made it this way. Now I eat it once or twice a week. It would be even easier with bagged, pre-washed kale. 2-3 lbs (1-1.4 kg)of Kale lemon juice 1 Tbsp (3 tsp) or less of olive oil 1-2 cloves of garlic, very finely minced or pressed GF soy sauce or tamari Wash the kale very well to remove sand and wee beasties. Strip out the big veins and stalks, and tear the bigger pieces into chunks. Fill a food processor bowl with the blade attachment 3/4 way up. Grind the kale down to almost minced. I don't think you can actually puree it no matter how hard you tried - kale is tough stuff. Do this until all your kale is chopped finely. Put all the kale in a vegetable steamer in a big pot with 1-2 " (1.25cm) of boiling water, cover and steam for 8-10 minutes. I do mine for 12 but that's just me. It will be a gorgeous shade of green! While the kale is steaming, get a big bowl and put in the olive oil (decent oil is worth the money) and the garlic and stir it around. Then add a couple of squirts of fresh lemon juice, and a couple of good splashes of the soy or tamari. I use tamari. Stir it around and let it sit to blend the flavors for a bit. Stir every couple of minutes until the kale is done. When the kale is done, put it in the bowl with the dressing and mix it all up very well. The heat from the kale seems to make magic with that simple bit of dressing. I don't measure things, I am really sorry and I hope that does not keep anyone from trying this delicious treat.
