I recieved this from a friend today, I just posted it as she wrote it.

Sounded so good as I love Avacado. YOu can change the Vinegar to suit

your diet, I am sure it will not affect the taste. I will be using

apple vinegar, as that is all I have in the house.

Sent to Rosanna from Mom..Some special recipe she found on the Internet

that is a " Secret Recipe " for some chicken restaurant famous out in the

west (300 of them).

Rosanna thinks this stuff is addictive and yummy!

1 ripe Avocado

1 Jalapeno , stemmed and quartered

(seeds can be taken out if too hot)

1 cup Water

1 Tablespoon White Distilled Vinegar

¾ teaspoon Salt

Combine the above in blender and blend until the pepper is well

chopped. The texture will be creamy and fairly smooth.

Then stir in:

2 Tablespoons chopped fresh Cilantro (or 1 Tablespoon dried)

2 Tablespoons chopped onion

Keep covered and refrigerated until ready to eat.

I used this on everything from crackers to haystacks to veggie

meatballs..I think it would also be very tasty as a salad dressing for

something different.

Amy, we tried your avocado spread for supper tonight and it was delicious!

Everyone liked it! I had it on romaine lettuce. . .DH had his on pasta. Both

ways, it was yummy! The added water helps stretch out the avocado. At the

price they are these days, it really helped. Thanks for sharing this recipe.

I'm working on a menu and thought I'd share with the group that this

recipe, posted by Amy Lovelace, is absolutely wonderful! Our family

recommends it highly!

Kim, I wasn't able to find it in the archives. I'm not sure if I

overlooked it or if maybe it's not there. Would you mind checking, s

you know where things are and where they are supposed to be? Knowing

me, I've just overlooked it. Thanks so much! I love the organization

of recipes that you've done for us and use our files FREQUENTLY!
