RANCH DRESSING MIX (soy free version follows in recipe below)

(Equals 1 packet or 1 cup dressing)

 

1/4 tsp garlic granules or powder

1/4 tsp salt

1/4 cup soymilk powder

1 tsp dried parsley

1 tsp dried chives

Pinch of black pepper

1 tsp lemon juice*

1 tsp lime juice*

 

Mix dried ingredients together.

Store in small ziplock bag (or other container).

When ready to use, mix in lemon and lime juices,

and add to recipe.

 

 

To make as dressing:

 

Mix in lemon and lime juices,

3/4 cup water,

and 1/3 cup vegan sour cream or vegan mayo.

Put into a jar, close lid tightly,

and shake until well-blended.

Use immediately.

Just before serving. Mix well.

 

 

NOTE: For a totally dry mix, you can use powdered lemon and lime

juices,available from Dixie Diners' Club (www.dixiediner.com).

 

Instead of soy milk powder, you can leave it out, and use soymilk

as the liquid in place of water.

 

Instead of the garlic powder, you can leave it out and use 1 clove

fresh minced.

SOY FREE VGEAN RANCH DRESSING AND RICE MAYO

 

RANCH DRESSING SOY FREE

1 clove garlic, peeled

Pinch of salt

1/3 cup rice mayo

3/4 cup rice milk

2 Tbs fresh lime juice

1 Tbs minced fresh parsley

1 Tbs minced fresh chives

Salt and pepper

 

Put garlic and salt into a processor, and process to a paste.

Put into a bowl.

 

Add the rice milk, lime juice, parsley, and chives, and whisk until

well blended.

 

Whisk in the mayo.

Add salt and pepper to taste.

 

Use immediately, or put in a jar and refrigerate.

 

RICE MAYO

6 oz rice milk

1 cup safflower oil, expeller-pressed

Juice of 1 lemon

1 tsp maple syrup

1/2 tsp salt

 

Put rice milk into blender.

Through top of blender, gradually add oil, in a constant thin stream.

Put into a small bowl.

 

Add maple syrup and salt, and mix well.

Add lemon juice last. As soon as you add it, the dressing will begin

to thicken.

 

Stir until creamy.

 

Store in refrigerator.

Keeps several days.
