Beat in egg. Stir in flour and cream of tartar. Stir in cherries. Form into 1 1/2 inch rolls on wax paper lined with powdered sugar. Freeze. Slice very thin while still frozen. Put on greased cookie sheet. Bake 6 to 8 minutes at 375. Note: Original recipe called for citron and other candied fruit peels, but I found the cookies could not then be cut very thin, and weren't as pretty. I make and freeze these way ahead of time, then can slice and bake them at the last minute.
