Guest guest Posted April 11, 2005 Report Share Posted April 11, 2005 VEGETABLE LO MEIN Source: previously posted to CVC by Vickilynn (adapted to gf) 1 Tbs. oil 1 med. onion, thinly sliced and separated 1 stalk celery, thinly cliced 2 carrots, thinly sliced 1 zucchini, cut into 2 inch julienne strips 2 cups broccoli 1 4oz. can water chestnuts, drained and thinly sliced (optional) 1 cup fresh snow peas or frozen peas 2 Tbs. gf soy sauce or Bragg's Liquid Aminos 8 oz. gluten free linguini, cooked al dente and drained 1 tsp. Oriental sesame oil (optional) Heat a wok or nonstick skillet over high heat. Add the oil, swirling it around the pan. Add the onions and stir-fry 2-3 minutes. Add the celery and carrots, stir-fry for 2 minutes. Add the zucchini, broccoli and water chestnuts, and pea pods and stir-fry for 2 minutes more. Add soy sauce; heat 1 minute.
