Guest guest Posted April 12, 2005 Report Share Posted April 12, 2005 Tofu Omelet Source: Recipes of Friendship Cookbook (adapted) 1 cup water 1/2 cup rice flour 1/4 cup cashews, washed 1 lb. tofu 3/4 tsp. salt 1 tsp. onion powder 1 tsp. garlic powder 1/4 tsp. turmeric 1 tsp. nutritional yeast flakes (optional) 1 tsp. lemon juice 1 tbsp. favorite fresh herbs such as chives, chopped (optional) Combine all ingredients in blender. Blend until smooth. Pour into well prepared, heated skillet to a thickness of 1/2 inch. Cover and cook for 10 minutes or until edges are golden. Loosen with a spatula and slide out onto a plate.
