Delhi Beans and Apples – Vegan 4 pts

2 tsps vegetable oil

1/2 cup chopped onions

2 small golden delicious apples -- peeled, chopped

1 can kidney beans -- (1-lb) rinsed and drained

1 can stewed tomatoes -- (1-lb)

2 tbsps honey

1 tbsp cornstarch

1 tbsp water

 

 

 

Preheat the oven to 350-degrees. Lightly oil a 1-1/2 quart baking

dish or spray with a nonstick cooking spray.

 

Heat oil in a large nonstick skillet over medium heat. Add onions and

cook 5 minutes, stirring frequently. Add onions and cook 5 minutes

stirring frequently.

 

Remove skillet from heat and add remaining ingredients, dissolving

the cornstarch in the 1 tbsp of water before adding. Mix well.

 

Spoon into prepared baking dish. Cover and bake 40 minutes.
