Creamy Tofu Topping

 

Source: Tofu and Soyfoods Cookery - Peter Golbitz

 

1 1/4 cups firm silken tofu -- crumbled

3 tablespoons sweetener of choice

1 teaspoon vanilla

 

Combine all the ingredients in a blender or food processor until

smooth and creamy.

 

Yield: " 1 1/2 cups "
