Guest guest Posted April 10, 2005 Report Share Posted April 10, 2005 Potato Patties Combine the following in a saucepan: 3 cups potatoes, peeled and diced 1 cup chopped onion 1 cup water Cook covered over low to medium heat until vegetables are tender, stirring occasionally. Remove vegetables from heat and mash with: 1/2 tsp. salt (or less) 1/2 tsp. garlic powder 1 tsp. dry parsley 2 Tbsp. fava/garbanzo bean flour (or other gluten free blend) Spoon onto oiled cookie sheet, and shape with the back of the spoon. Bake at 350 - 375 degrees on first side. Flip patties. Bake for an additional 15 - 20 minutes on second side. Serve hot as is. They are also pretty tasty cold. These do not freeze well. Serve potato patties with a cooked vegetable blend (something colorful) or cooked greens, sandwiches, and fresh tomato wedges. Enjoy!
