Mild and Tasty Chili

 

Source: 100% Vegetarian

 

Simmer the following together until vegetables are tender.

 

1/2 - 3/4 cup water

1 cup chopped onion

3 large cloves garlic, minced

1 large bell pepper, diced

 

Then mix in:

 

2 cups cooked pinto beans, drained (or 1 -- 16 oz. can, drained)

1 -- 16 oz. can tomatoes (with juice), cut in small pieces

6 oz. tomato paste

1 tsp. cumin

1 tsp. liquid sweetener of choice

1 tsp. oregano

1 tsp. salt

 

Simmer over low heat, stirring occasionally until thoroughly heated

and spices are blended.

 

Note: kidney beans may be used in place of pinto beans with good

success.
