Nut Raisin Spread

1 cup almonds

1 cup roasted cashews

1 tablespoon fresh lemon juice

1/2 teaspoon ground coriander

1 cup orange juice

1 cup raisins

 

Process nuts in a blender or food processor for 3 - 5 minutes, or

until a paste forms. Mix in lemon juice and coriander. Add orange

juice and raisins and continue processing until well mixed. Yields:

2 1/4 cups or 18 servings.
