Healthy Apple Salad

Amount Measure Ingredient -- Preparation Method

DRESSING:

4 tablespoons orange juice

1 tablespoon honey [MAY SUBSTITUTE Maple Syrup or Brown Rice

Syrup]

1 teaspoon fresh grated ginger root

 

FRUITS AND VEGETABLES:

1/2 cup sliced or chopped celery

4 apples -- peeled, chopped or sliced

1/3 cup almonds -- whole or chopped

1/2 cup raisins or dry cranberries

 

Begin by mixing the orange juice, honey and grated ginger root to

create the dressing.

 

Now set up the fruits and vegetables into a large bowl.

 

Pour dressing onto apples, nuts, celery or cranberries.

 

Chill for one hour. May be served on a leaf of lettuce with a slice

of orange as garnish.
