Guest guest Posted April 10, 2005 Report Share Posted April 10, 2005 Tofu and Broccoli in Garlic Sauce Source: Tofu Cookery/previously posted by Aviva to VGF list Cut 1 1/2 lbs tofu into cubes and marinate them in 1/4 cup gf soy sauce. Carefully stir the marinating tofu occassionally while preparing the sauce. Cut 2 medium onions in half lengthwise, the into thin half-rings and set aside. Slice and set aside 8 oz fresh mushrooms. Crush and set aside 1 bud garlic (medium size, 8-10 cloves). Cut 1 lb broccoli into large florets and set aside. Dissolve 2 cups boiling water and some gf bouillon together and set aside. Drain the tofu and reserve the liquid. Brown tofu in 3 Tbs oil in a heavy skillet or wok on all sides. Remove tofu when brown. Add 1 Tbs oil to the pan. Quickly fry the onions and mushrooms until soft. Add and stir together: the crushed garlic the bouillon mixture 1 Tbs prepared Chinese mustard 3 Tbs honey (or vegan alternative liquid sweetener of choice) 1 tsp crushed red pepper (more or less to taste) 1/2 tsp giner or 1 tsp fresh ginger, peeled and grated Add the tofu and reserved marinade. Simmer over medium heat for 1 minute and then add the cut broccoli. Simmer 3 minutes more. Turn off and set aside for 5 minutes. Serve over rice.
