Guest guest Posted December 13, 2004 Report Share Posted December 13, 2004 Nutty Soft Taco Filling Source: The McDougall Quick & Easy Cookbook 3/4 c. raw peanuts 1/2 c. raw sunflower seeds 1/2 c. roasted sunflower seeds 1/2 c. raw sesame seeds 1 6 oz. can tomato paste 1 tsp. ground cumin 1 tsp. soy sauce 1/2 tsp. chili powder 1/4 tsp. onion powder 1/8 tsp. garlic powder Place the peanuts and raw sunflower seeds in a saucepan with water to cover. Cook, covered, over medium heat for 30 minutes. Remove from heat and drain; reserve the cooking liquid. Place the cooked nuts in a food processor with the roasted sunflower seeds and the sesame seeds. Process briefly. Add the tomato paste and process again. Add enough water to the reserved cooking liquid to make 1 cup. Gradually add the liquid to the nut mixture while processing. Add the seasonings. Process until well blended.
