It is precooked to make it blend quickly and easily in cold liquids. Sets up immediately reaching full thickness within 10 minutes without cooking. Instant clearjel can be used in cooking as well. It stores indefinitely. Add liquid (hot or cold) to Instant clearjel using a wire whisk. Stir until smooth. You may be able to reduce the amount of sugar needed in certain recipes.
